Ingredients: 1 frozen pie crust - baked 1/2 cup sugar 1/4 cup cornstarch 2 cups half & half 4 egg yolks 3 Tablespoons butter 1 cup sweetened flaked coconut 2 1/2 teaspoons vanilla 2 cups whipping cream 1/3 cup sugar 1/2 cup toasted coconut

Directions:Combine 1/2 cup sugar and cornstarch in a heavy saucepan. Whisk together half & half and egg yolks. Gradually whisk egg mixture into sugar mixture; bring to a boil over medium heat whisking constantly. Boil gently 1 minute and remove from heat. Stir in butter, 1 cup coconut, and 1 teaspoon vanilla. Cover with plastic wrap and let stand for 30 minutes. Pour into crust and chill for 30 minutes. Beat whipping cream at high until foamy, gradually add 1/3 cup sugar and remaining 1 1/2 teaspoons vanilla and beat until soft peaks form. Spread on pie and sprinkle with toasted coconut |

Notes: One of Shelby's favorite desserts is coconut cream pie. This recipe is the best one I have found for that. Hope she makes one and brings me a sample!
