Preheat oven to 350º. Spray glass casserole dish with cooking spray

3 small cans pork and beans
4 pieces bacon
1 medium onion, chopped
light brown sugar
ketchup
salt and pepper

Directions:
Directions:
Slice bacon into small pieces. Fry until almost done, add onions and cook 3-4 min.more over med-low heat until onions are almost soft. Add ketchup and brown sugar to bacon onion mixture until it makes a kind of thick sauce. Cook until sugar melts and all is well mixed. Add this mixture to the beans along with salt and pepper. Combine all until well mixed. Cover with foil and bake for 1 hour.


When done, it may look like there is too much sauce, but this will gel as the casserole sits.
I usually drain some of the juice from the beans to give more flavor to the bacon mixture.
