Preheat oven to 350º Spray oval baking pan with cooking spray.

1 1/2 lb 85% ground chuck
1 med union-chopped small or 1 pkg onion soup mix
1 Tbsp garlic powder
1/2 cup Romano cheese (do NOT use Parmesan)
1/4 cup plain bread crumbs
1/4 tsp ground oregano
2 tsp garlic powder
2 eggs
salt and pepper to taste
3 pieces of bacon
carrots
mini potatoes
water

Directions:
Directions:
Combine all ingredients except bacon. Mix well and shape into loaf. Place 2 pieces of bacon on bottom of pan. Put meatloaf on top of bacon. Use wooden spoon handle to make 4-5 indents on top of loaf. Take last piece of bacon and cut into 3 pieces. Layer on top of meatloaf.
Peel and slice carrots and place around loaf.. Place mini potatoes around meatloaf. Pour about 1 cup of water around
meatloaf over vegetables..Bake 1 1/2-2 hours or until vegetables and meat are done. Check after about an hour and if needed, add about a half cup water.
