Ingredients:  
Use whatever fresh veggies you like - cauliflower, broccoli, carrots, sweet potatoes, brussel sprouts, etc.
2-3 T extra-virgin olive oil
1 t garlic salt
1/2 t pepper
1 T balsamic vinegar
1/2 c bread crumbs
1/4 c grated parmesan cheese

Directions:
Directions:
Preheat oven to 450º
Trim, rinse, and dry all veggies - mix together
Drizzle with olive oil, sprinkle with garlic salt, pepper, bread crumbs, grated parmesan cheese
Toss until all seasonings are evenly distributed on all veggies
Pour onto greased baking pan, baking for 20-25 minutes, stirring once or twice
Remove from oven
drizzle with balsamic vinegar

Our family really enjoys this recipe using whatever veggies we might have. If you decide to grill the veggies, you can use frozen veggies and wrap them in aluminum foil. They're still yummy but not as crisp. Enjoy!
