"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Personal Notes:
I came across this copycat recipe of an Olive Garden version of this dip, and it is pretty darn close to the original. The red pepper flakes give this a nice zip, so if doubling, you may not want to double the heat. The dip is popular at parties, and honestly this is the only way I will eat cooked spinach.
