6 slices bacon
cup chopped onion
6 eggs beaten
⅓ cup milk
tsp salt
tsp pepper
2 cups hashed brown potatoes (cooked)

Directions:
Directions:
Cook bacon until crisp. Leave drippings in skillet. Remove bacon and crumble. Add potatoes and onion to hot drippings and cook until crisp and brown. Blend eggs, milk, salt, and pepper and pour over potatoes. Top with crumbled bacon. Cover, cook over low heat until eggs are set. Loosen omelet, fold in half and slip into serving platter. If desired top with 1 cup cheese along with bacon.
