2 to 3 quarts swiss chard stems
3 ½ medium onions
2 cups vinegar
2 cups sugar
1 ½ tsp. celery seed
1 ½ tsp. mustard seed

Sauce:

¼ cup cornstarch
½ tsp. tumeric
½ tsp. curry powder (optional)
1 tsp. dry mustard powder
¼ cup cold water

Directions:
Directions:
Take stems and cut into small pieces. Sprinkle with salt and let stand for 2 hours. Cut up onion into small pieces and add to the swiss chard. Let stand ½ hour longer. Drain well. 

In dutch oven, cover with vinegar, sugar, celery seed and mustard seed. Cook until tender. Make the sauce and add to the cooked chard. Boil 15 minutes. Put into sterilized jars and seal. Makes 5 pints.
