6 eggs
4 tablespoon flour
1 box frozen chopped spinach, thawed and squeezed dry
½ pound (1 cup) cottage cheese
4 tablespoon (½ stick) melted butter
½ pound shredded cheese (I use Colby or Monterey Jack)

Directions:
Directions:
1. Preheat oven to 350º.
2. Grease casserole dish and set aside.
3. Beat 2 of the eggs with the flour. Then beat in 4 more eggs into that mixture.
4. Add spinach, cottage cheese, melted butter and shredded cheese.
5. Pour into casserole dish.
6. Bake uncovered for 1 hour.
