½ cup margarine
1 egg
1 ½ cups white sugar
1 cup buttermilk
1 tsp. vanilla
2 ½ cups flour
1 tsp. baking soda
1 tsp. cinnamon
4 cups chopped rhubarb

Topping:

1 tsp. cinnamon
½ cup brown sugar, packed
½ cup chopped nuts (optional)

Directions:
Directions:
Cream together margarine, egg and sugar. Add buttermilk and vanilla and mix well. Add flour, baking soda and cinnamon and mix together. Stir in chopped rhubarb. Put in a greased 9 X13 or 11  X  14  inch  pan.  Mix  together  the  topping  ingredients  and sprinkle on top of cake.
Bake at 350º F. for 35 to­ 40 minutes until well browned. Test with toothpick.
After the cake is baked, simmer ¼ cup margarine, ⅜ cup white sugar, ¼ cup evaporated milk and 1 tsp. vanilla. Simmer until the sugar is dissolved and pour over baked cake.
I found that the cake is moist without the last mixture poured over cake. This makes it more like a pudding cake. Serve with whipped cream or ice cream. Freezes well.
