1 can (20 oz) crushed pineapple in syrup
1 c butter, softened
1 c brown sugar
1 c granulated sugar
4 eggs
1 lb carrots, shredded
1 cup raisins
2 t vanilla
3 c flour
2 t baking soda
1 t cinnamon
1 t ginger
1/2 t salt

Silky Frosting
1 pkg 8 oz cream cheese softened
1/2 c butter, softened
1 T fresh lemon juice
1 t freshly grated lemon peel
1 1/2 c sifted powdered sugar
beat until light & fluffy

Drain pineapple well, pressing out excess syrup.
Cream butter & sugars until light & fluffy.
Beat in eggs, pineapple, carrots, raisins, and vanilla
Combine and add dry ingredients in small amounts until well blended.

9x 13 cake pan
350 oven
50-60 minutes

Cool Cake & Frost with Silky Frosting* (recipe above)

*you can use a can of cream cheese frosting if desired to save time and money
