7 ladyfingers, halved lengthwise
1 package Neufchatel cheese, (8 oz), softened
1 tablespoon brown sugar, firmly packed
1 cup lite ricotta cheese
3 tablespoons Kahlua
1 tablespoon instant coffee
2 teaspoons unsweetened cocoa
1 teaspoon vanilla extract
1 teaspoon unflavored powdered gelatin
¼ cup cold water
additional unsweetened cocoa, optional

Directions:

1. Arrange halved ladyfingers, cut sides in, around the edge of a 3-cup bowl. Set bowl aside.
2. Position knife blade in food processor bowl, add Neufchatel cheese and brown sugar, and process until smooth. Add ricotta and next four ingredients; process until smooth. Transfer mixture to a medium bowl.
3. Sprinkle gelatin over water in a small saucepan. Let stand 1 minute. Cook over medium heat, stirring to dissolve. Remove from heat. Let cool slightly. Add gelatin mixture to cheese mixture; stir well.
4. Spoon mixture into ladyfinger-lined bowl. Cover and chill at least 8 hours. Sprinkle with unsweetened cocoa, if desired
