Jumbo Raisin Cookies Recipe

2 cups raisins 
1 cup boiling water
1 cup shortening or margarine
2 cups sugar
3 eggs
1 tsp. vanilla
4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 ½ tsp. cinnamon
½ tsp. nutmeg
¼ tsp. all spice
1 cup chopped nuts (optional)

Boil raisins and water in a saucepan for 5 minutes. Cool. Cream together margarine and sugar. Add eggs. Beat well. Blend in raisin mixture and vanilla. Stir the flour, baking powder, soda and spices together. Add to the creamed mixture. Mix well. Stir in nuts. Drop from teaspoon onto greased cookie sheet. 
Bake at 350º F. for 10 to 12 minutes until light brown.
