4 Boneless Skinless Chicken Breasts (you can use bone in cut up chicken pieces)
½ tsp. salt
¼ tsp. pepper
2 T. Butter
¾ Cup water
¼ # Mushrooms, thinly sliced
1 large tomatoe, finely chopped. (I sometimes use ½ cup canned diced tomates)
½ tsp. thyme
4 green onions, thinly sliced
2 tsp. flour
½ cup chicken broth
¾ cup sour cream

Directions:
Directions:
Season chicken with salt and pepper. Brown in butter in large skillet, about 10 minutes. Add 1/4 cup of the water. bring to boiling, lower heat; cover and simmer about 10- 15 minutes or until tender and cooked through. Transfer to plate and keep warm.

Scape up any browned bits from skillet. Cook mushrooms, tomato, green onion, and thyme for 3 minutes. Sprinkle vegetables with flour, mix well and cook for one minute.Stir in Chicken broth and sour cream. cook over low heat until thickened and bubbly, about 3-5 minutes.
Pour over chicken and serve.


I like this over egg noodles!
