12 oz fresh cranberries
¾ cup dark brown sugar or grated panela
1 cup orange juice
¼ tsp ground ancho chile powder
½ tsp cayenne pepper
¼ tsp salt

Directions:
Directions:
Wash cranberries and chill in a bowl of water overnight.

In a pan on medium heat, combine cranberries, sugar, orange juice, ancho chile powder and cayenne .

Cook until cranberries pop and sauce becomes thick, stirring constantly for about 10 minutes.

Add more brown sugar if desired. Sauce should be hot and sweet. Add a pinch of salt.

Remove from heat and transfer to a glass bowl. Allow to cool to room temperature.

Panela is unrefined cane sugar that usually comes in a cone. It can be found in stores that carry Central or Latin American food. The original recipe called for panela or sugar, both of which are overwhelmed by the cranberries, ancho chile and cayenne. Dark brown sugar makes for a deeper and richer flavor.
