4 oz. milk or white chocolate
½ c boiling water
2 ¼ c sifted flour
1 tsp. baking soda
½ tsp. salt
1 c butter
2 c sugar
4 egg yolks
1 tsp. vanilla
1 c buttermilk
4 egg whites, stiffly beaten

Filling & Frosting:

1 c evaporated milk
1 c sugar
3 egg yolks
½ c butter
1 tsp. vanilla
1 ⅓ c coconut
1 c chopped pecans

Cake:

Preheat oven to 350º. Melt the chocolate in the boiling water. Cool. In a small bowl mix sift all of the dry ingredients together. In another bowl cream the butter and sugar. Beat in the egg yolks 1 at a time. Blend in the vanilla and melted chocolate/water mixture. Add the dry ingredients and buttermilk alternately. Fold in the egg whites.. Line 3 9" pans with parchment. Pour batter evenly into each pan. Bake for 30 min. or until cake center springs back when pressed. Cool for 15 min. then remove from pans and finish cooling.

Filling & Frosting:

In a saucepan mix milk, sugar, egg yolks, butter and vanilla. Cook over medium heat, stirring well, until mixture thickens. This takes about 12 min. Remove from heat and mix in the coconut and pecans. Cool until it reaches a spreading consistency. Beat occasionally. Spread this in between the 3 cake layers then over the entire cake.
