2 c. whipping cream
2 packages of Boursin cheese
3lbs. red new potatoes, thinly sliced
salt and pepper
fresh parsley

Directions:
Directions:
Stir cream and cheese in a heavy sauce pan over medium heat until cheese melts and mixture is smooth.

Arrange half of sliced potatoes in a greased baking dish.

Generously season potatoes with salt and pepper.

Pour half of the cheese mixture over the first layer of potatoes.

Arrange second layer, season, and add remaining cheese mixture.

Bake at 400 for 1 hour - potatoes should be golden brown and tender.

This recipe is from the Feed My Sheep cookbook that Nana gave to Aunt Jill and myself. I am pretty sure Uncle Cholly made this recipe almost immediately and deemed it a WINNER!

The best part of this recipe is picking at the burnt cheese stuck to the pan just before cleaning it (which is actually not that much fun).
