Sift flour on large cutting board or flat work surface.
Make shallow well in center and gradually add eggs, salt, oil and water while you mix with fingers forming a ball.
Clean working surface and flour lightly.
Knead dough vigorously for 10 minutes.
Put in a bowl and cover for 30 minutes.
Meanwhile, clean and flour working surface.
Divide pasta bowl into 4 sections.
Now roll and cut as follows or use pasta machine.
Hand cutting – Roll dough as thin as possible, Fold over several times lengthwise to form a long roll. Cut crosswise making the stripe. Place noodle on clean cloth or dish towel and allow to dry before cooking.
Makes 1 ½ lbs.
