Pan Roasted Salmon with Citrus-Balsamic Vinaigrette Recipe

SAUCE:

¾ cup fresh orange juice
½ cup balsamic vinegar
2 Tble olive oil
2 Tble finely minced onion
2 tsps each parsley, basil, and mint
2 Tble finely minced orange zest
⅛ tsp kosher salt
black pepper

SALMON:

4 6 ounce skinless fillets salmon
Kosher salt
pepper
2 Tble olive oil

Preheat oven to 450º

Combine all ingredients in a glass jar and shake vigorously. Reserve

Heat 2 Tble olive oil in oven proof pan. Sprinkle Salmon with salt and pepper and add to hot oil. Sauté about 1-2 minutes then put in oven to roast until done, approximately 6-9 minutes.

Remove Salmon from oven and keep warm. Add sauce to pan, heat til reduced.

Plate Salmon and pour reduction over.

Brendan, Colin and I (pregnant with Mitch) went to Doc Mika's for dinner it was my first time eating Salmon. Serve with wild rice and green beans.
