1½ cups very ripe bananas
2 tsp lemon juice
3 cups all-purpose flour
1½ tsp baking soda
¼ tsp salt
¾ cups soft unsalted butter
2 cups sugar
3 eggs
2 tsp vanilla
1½ c buttermilk

FROSTING:
½ cups softened unsalted butter
8 oz cream cheese, room temperature
1 tsp vanilla
3½ cups powdered sugar

Directions:
Directions:
Preheat oven to 275º. Grease and flour a 9X13 cake pan. Mash banana and mix with lemon juice and set aside. In a medium bowl, combine flour, baking soda and salt. set aside. In a large bowl, cream butter and sugar. Beat in eggs, one at a time. Stir in vanilla. Beat in flour alternatively with buttermilk. Stir in bananas. Pour into cake pan and bake 1 hour 10 minutes, or until knife comes out clean. Immediately place in freezer for 45 minutes. Make the frosting by creaming the butter, cream cheese and vanilla on low, slowly add powdered sugar and then turn up to medium high, beating until smooth. Frost the cake. This IS a crazy recipe, but unbelievably moist and delicious!
