½ package lasagna noodles
2 jars pasta sauce, (26 ounce)
1 container lite ricotta cheese
1 package frozen chopped spinach, thawed and drained
1 pound shredded lite mozzarella cheese, divided
½ cup grated Parmesan
2 eggs, beaten
chopped parsley
Optional:
1 zucchini , sliced
½ pound mushrooms, sliced

Directions:
Directions:
1. Prepare lasagna noodles according to package directions. Drain.
2. In a medium bowl, combine ricotta, spinach, 1/2 cup mozzarella, Parmesan and eggs. Mix well.
3. In a 9” x 15” baking dish, layer:
sauce
lasagna noodles
sauce
spinach mixture
mozzarella
lasagna noodles
sauce
zucchini and/or mushrooms can be added to any layer
4. Continue to layer, reserving 1/2 cup mozzarella. Cover and bake at 350 F until bubbly, about 45 minutes. Uncover and top with remaining mozzarella and parsley. Bake for another 15 minutes. Let stand 10 minutes before serving.
