Potatoes
Olive oil or goose fat. (Goose fat is the best but olive oil is perfectly good)

Directions:
Directions:
Peel potatoes
Cut into even sized pieces
Put in a pan and cover with cold water
Bring to the boil
Cook for 2 minutes
Drain in a colander

Turn on oven. Heat to 180 deg C
Put olive oil / goose fat in baking tin and put in the oven to heat oil

When oil is very hot
Put potatoes in hot oil in pan
Shake the tin or turn the potatoes to get oil all over them
Return to the oven and cook for 30 minutes
Check half way through and turn potatoes
Return to the oven and cook until crisp and brown
