1 chicken
1 lemon. Or 4 rashers of bacon
50g butter
1 tbsp honey
Dried thyme

Directions:

Heat the oven to 180 deg C

Prepare the chicken (remove the giblets, if any)
Spread half of the butter over the breast of the chicken
Put the other half inside the chicken and sprinkle Thyme inside too
Sprinkle dried thyme over the butter pet it to make it stick in the butter
Cut the lemon in 4 sections
Squeeze one quarter of over the breast
Put the squeezed quarter inside the chicken
Put the other 3 quarters into the chicken as well, squeezing the quarters as you do so the juice gets into the meat

Alternatively
Cut the rashers of bacon in half and place over the breast of the chicken

Place the chicken on a rack in a baking tin and put in the oven
Cook for 45 minutes.
Take out and pour over the tbsp of honey
Cook for a further 15 minutes

If you chop carrots and/or parsnips and put them in the baking tin under the rack they will be yummy and caramelised when you serve the chicken

Gravy
put the chicken on a plate to rest, take out the carrots
Put the pan on the stove top on a medium heat
Add a little flour to the pan, stir it into the juices in the pan
Add some water and/or stock.
Keep stirring
Check taste for salt and pepper, add as required
If available, a splash of wine helps too
