Zucchini Loaf Recipe

3 eggs
1 cup vegetable oil
2 cups zucchini, peeled and grated
2 cups flour
1 tsp lemon rind, grated
1 tsp cinnamon
tsp baking powder
tsp baking soda
2 cups sugar
1 tbsp vanilla
1 tsp salt
1 cup nuts, finely chopped
1 cup glazed fruit

Beat eggs until light and frothy. Add sugar, oil, and vanilla. Mix until thick. Add zucchini. Stir thoroughly. Sift flour, cinnamon, baking powder, baking soda, and salt. Add to mixture. Stir until smooth. Add nuts, lemon rind, and fruit. Bake on 2 greased and floured loaf pans at 350 for 1 hour.
