2 large apples, cored, cut into 1" chunks
2 large sweet potatoes, peeled 1" chunks
1/2 cup brown sugar
1/2 cup oat bran cereal, milled to flour in blender
1/2 cup 1-minute oatmeal
1/2 tsp cinnamon
1/3 cup unsalted margarine

Directions:
Directions:
Mix chunks of apples and potatoes in 9" pie pan. Sprinkle with 2 tbsp of sugar. Mix remaining sugar, oat bran, oatmeal and cinnamon in a bowl. Work the margarine in a bit at a time until the mixture is crumbly. Sprinkle the crumbly mixture over the apples and potatoes. Bake 350 degrees for about an hour or until the potatoes are tender and the topping is browned. Serve while still warm. For a special treat, heat evaporated milk with a tsp of vanilla to form a "whipped cream" topping.
