6 largish onions
50 g butter
1 tbsp flour
1/2 litre chicken stock (real or diluted stock cube)

4 slices of bread
Grated cheese

Directions:
Directions:
Slice the onions and chop in halves or quarters
Heat the butter in a saucepan
Add the onions and sauté until soft but not brown (add a little butter if it’s too dry)
Add the flour and stir for one minute to ensure the flour cooks
Add a little of the stock, mixing well
Add the rest of the stock a little at a time and keep stirring

Bring to the boil and cook for 10 minutes

Prepare the bread either by baking slowly in the oven or roasting

Serve the soup into 4 dishes
Lie a slice of baked bread/toast on top of each bowl of soup
Sprinkle a good amount of grated cheese over the top of the bread
Put the bowls under the grill until the cheese has melted

Serve warning guests that it will be very hit!!

This soup is surprisingly filling, so guys don’t think you will need a big meal to follow. Would be great with a simple sandwich or in its own. Enjoy
