4 ½ C white rice, cooked
¼ C + 1 ½ t sesame oil
1 ½ c frozen peas and carrots, thawed
1 ½ onion, chopped
1 T minced garlic
3 eggs, beaten
⅓ C + 2 t soy sauce

Directions:
Directions:
On medium high, heat oil in a large skillet or wok. Add peas/carrots, onion and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side. The pour your eggs on the other side and scramble. Add rice and soy sauce and blend together well. Stir fry until thoroughly heated.
