9" baked pie shell
4 egg yolks
6 eggs whites
grated peel of lemon
1/4 cup fresh lemon juice
3 tbsp water
1 1/4 cup sugar

Directions:
Directions:
Beat egg yolks until thick, gradually adding the lemon peel, juice, water and 1/2 cup of the sugar. Cook in heavy, medium-size sauce pan, low heat until thick, stirring constantly. Beat egg whites until stiff, adding remaining sugar gradually. Fold 1/3 of egg whites/sugar mixture into the warm egg yolk mixture. Pour into the pie shell. Use remaining egg whites/sugar mixture to make meringue topping spreading in decorative fashion. Bake at 325 degreesfor about 15 minutes or until meringue browns lightly. Keep out of drafts as the pie cools.
