1 medium cucumber
1 small onion quartered
1 (8 oz) package cream cheese, softened
½ teaspoon salt
Dash of hot pepper sauce
Thinly sliced white bread
Mayonnaise
For garnish if desired: parsley, watercress, paprika

Directions:
Peel cucumber and slice in half lengthwise; remove seeds with a small spoon. Place cucumber and onion in blender and pulse until minced. Place into small glass mixing bowl. Add cream cheese and stir well. Add salt and hot sauce. Mix. With round cookie cutter or biscuit cutter, cut rounds out of bread slices. Spread a light layer of mayonnaise on top of each slice. Spread cheese mixture on half of the rounds and top with the remaining rounds. Or you can use a small round loaf of bread. Can garnish
with sprig of parsley, watercress or dust with paprika.

Refreshing on a hot summer day. When we were children, I remember eating radish, cucumber, green pepper, tomato or kohlrabi sandwiches.
