2 cups ground cooked meat ( beef, chicken, pork)
1 cup thick white sauce
1 tsp. Minced onion
1 tsp. parsley flakes

Thick White Sauce
4 T. Butter
4 T. Flour
1/4 tsp. salt
1/8 tsp. pepper
1 cup milk

Directions:

I grind leftover meat in meat grinder
Mix with white sauce, minced onion and parsley

White Sauce
Melt butter on low heat in heavy saucepan
Blend in flour, salt, pepper, stirring constantly
Remove from heat and stir in 1 cup milk
Bring to boil, boil 1 minute, stirring constantly

Shape mixture into pyramids or cylinders
Roll in fine dry bread crumbs. Let dry 2-3 hours.
Dip in mixture of - 1egg, slightly beaten, 2 T. Water
Again roll in bread crumbs. Let dry 1/2 hour
Fry in hot deep fat (400º) until brown (1-2 min)
Drain on absorbent paper in warm place
Keep hot in oven until time to serve

I used leftover beef roast as it was a good way to stretch a meal. Also we raised Hereford beef cattle and always had great beef to eat!
