Combine 2.5 cups granulated sugar, 1/2 cup light corn syrup, 1/2 cup water. Cook to soft ball stage (236) stirring only until sugar dissolves. Meanwhile, beat 2 egg whites until stiff peaks form. When syrup reaches 236 gradually add half the syrup to egg whites beating at speed on electric mixer. Cook remaining syrup to hard-ball stage (250) and slowly add to eggs, beating constantly. Add 1 tsp vanilla and beat until candy holds its shape (about 5 minutes). Add 1/2 cup chopped nuts, if desired. Drop from a teaspoon onto waxed paper. Makes 40
