2 tsp olive oil
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
1 chipotle pepper in adobo sauce (1 pepper, chopped)
16 oz Baby Bella mushrooms, sliced thin
1 cup tomatoes, roughly chopped + set some aside for garnish
1/4 cup cilantro, roughly chopped + set some aside for garnish
1 lime, quartered
6 ***Cheesy Taco Shells (see below)

Yields 2 servings
1 lean per serving
Ingredients
12 oz 2% reduced fat Mexican cheese blend, shredded (2 oz per taco shell)
Cooking spray

Directions:
Directions:
1. Preheat oven to 400°F.
2. Line a large cookie sheet covered with parchment paper and lightly oil with cooking spray.
3. Spread the cheese in circular shapes with 2 oz of cheese for each taco shell.
4. Bake for 6-8 minutes.
5. Remove from oven and let cool just until the cheese no longer stretches when you pick it up.
6 Drape each cheese circle over the taco contraption you've already set up while it was baking. See picture tutorial above.
7 Once completely cooled, remove the formed taco shells and place upright on taco plates, or on their sides.
Notes
These shells hold up best when used shortly after making them. Do not refrigerate. Serve them the same day you make them!

In a medium pan, heat oil on medium high heat.
Add cumin, oregano, salt, and chipotle pepper to pan and stir frequently until spices are roasting and fragrant.
Add mushrooms to pan and mix well into spices.
Stirring frequently, cook down the mushrooms, approximately 5 minutes.
Add tomatoes and cilantro. Combine well and cook until tomatoes break down, approximately 5-7 minutes.
Turn off heat.
Portion the filling into 1 1/2 cups per serving and distribute among the taco shells. Three shells per serving.
To serve: Garnish with the lime quarters and the cilantro and tomatoes you had set aside earlier. Enjoy!
