5 eggs - separated
½ c. shortening or butter
1 tsp. vanilla
1 tsp. baking soda
1 c. flaked cocoanut
1 stick butter
2 c. sugar
1 c. buttermilk
2 c. flour
1 c. chopped pecans

Cream cheese frosting
1 8 oz. package cream cheese
½ stick butter
1 box powdered sugar

Directions:
Directions:
Beat egg whites and set aside. Cream butter, shortening and sugar. Add 1 egg yolk at a time. Add vanilla, combine buttermilk and soda, add alternately with flour and fold in remaining egg whites, cocoanut and nuts. Pour into 2 floured and greased cake pans. Bake 325º - 25 minutes or longer if necessary.

For Cream Cheese Frosting:
Mix ingredients and spead on each cake and stack on a platter. Spread on top and sides.
