½ cup egg whites (4 medium)
1¼ cups white sugar
¼ teaspoon salt
½ teaspoon vanilla
1 teaspoon almond extract
2½ cups shredded coconut

Directions:
Directions:
Heat oven to 325º. Beat egg whites until frothy. Gradually beat in sugar. Continue beating with rotary beater in mixer until very stiff and glossy. Stir in salt, vanilla, and coconut. Drop heaping teaspoonfuls of dough 2" apart on ungreased brown wrapping paper on baking sheet. Bake about 20 minutes, or until set and delicately browned. Remove paper with baked kisses; lay wet towel on hot baking sheet. Place paper of kisses on towel; let stand 1 minute. Steam will loosen kisses. Slip off with spatula. (I bake on ungreased silpat mat, and it works perfectly).

These are Gung Gung's favorite cookie - he calls them coconut macaroons.
I bake these on a Sipat mat, and omit the steps with baking on brown wrapping paper.
