1 lb ground beef
3/4 C chopped onion
3/4 C shredded carrots
3/4 C diced celery
1 tsp dried basil
1 tsp parsley
4 Tbs margarine divided
3 C chicken broth
4 C diced, peeled potatoes, or canned potatoes
1/4 C flour
8 oz American Cheese
1 1/2 cups milk
3/4 tsp salt
1/2 tsp pepper
1/2 C sour cream

Brown meat, drain and set aside
Saute onion, carrots, celery, basil & parsley in 1 tsp margarine until vegetables are tender.
Add broth, potatoes and beef
Bring to a boil
Simmer til potatoes are tender

Meanwhile in a small pan melt remaining margarine, add flour, cook and stir until bubbly, add milk,
cheese, salt and pepper.

Add to soup, bring to a boil, cook and stir for 2 minutes

Reduce heat, add sour cream, mix well and serve
