1 Pkg (8 oz) Stove Top Stuffing for Chicken, low sodium optional
¼ cup butter or margarine cut up
1 cup grated parmesan cheese
1 small onion, finely chopped
1 & ⅔ cups hot water
1 cup cooked white or brown rice
2 eggs
Pepper to taste
1 tsp dried parsley
1 tsp hamburger spice mix or other spices of your choice

Directions:

Heat oven to 400ºF
Mix stuffing mix, hot water and butter in large bowl until blended.
Add remaining ingredients, mix lightly. Shape into 1 inch balls.
Place in single layer on 2 rimmed baking sheets sprayed with cooking spray or lined with parchment paper.
Bake 15-20 min. or until heated through and lightly browned.
