½ lb. ground beef
1 pkg. taco seasoning
1 can dark red kidney beans, rinsed and drained
1 can diced tomatoes
6 C white rice, cooked
1 C Salsa
1 C onion, chopped
¾ C cheddar cheese
Preheat oven to 400º.
Lightly coat a 9x13 baking dish with cooking spray.
In a large saucepan, brown the ground beef.
Add taco seasoning, beans, tomatoes, and onion and simmer for about 10 minutes to combine flavors.
Remove from heat
In a large bowl, combine meat and bean mixture with rice and salsa.
Mix well and transfer to baking dish.
Bake for 20-25 minutes or until heated through.
Remove from oven and sprinkle the cheese over the casserold.
Bake for an extr 3-5 minutes or till cheese is melted.
