1 whole chicken cut up; or thighs & drumsticks, or both ( do NOT use boneless skinless chicken breasts---unless you like eating cardboard---the flavor is all in the chicken skin and fat)


6* cloves of garlic
2 or 3 sweet peppers
or 5 or 6 of the sweet mini peppers
Olive oil, salt and pepper to taste
1 onion

Powdered ginger or chili ( as much as you want, if you are daring!)


Glass of white wine (should be Italian!)


Second glass of white wine for you to drink whilst cooking

Directions:

Cut up the chicken, or place the chicken pieces, skin side up in a baking dish
Broil for about 5 to 6 minutes. The skin should be getting crispy. Remove from dish and set aside

Leave any fat in the bottom of the pan.....

Fine chop the garlic & onions together, and toss in the fat of the baking dish. Add some olive oil, and bake for 5 minutes in a hot (400+) oven.

When part cooked , place the chicken pieces on top of the garlic and onions; sprinkle with garlic and/or chili powder, add the white wine, and the chopped sweet peppers on top.

Cover with foil and bake for 30 minutes until the chicken is cooked through.

at the end remove foil, and place under broiler for 2 to 3 min.
