1 lb of ground beef
2-3 T of Olive Oil
1 cup of chopped yellow onion
1 cup of chopped bell pepper (we used the yellow/red/green mixture)
Chopped Jalapeno (as much or as little as you like)
Fajita seasoning mix (we used a special mixture of salt, pepper, cumin, and nature’s seasons)
2 tablespoons garlic
1 package of prepared Spanish Rice
1 can refried beans
Colby Jack Cheese (amount-as you like it)
Salsa (we use our homemade)
Flour Tortillas

Directions:
Directions:
Preheat oven to 350 degrees

Brown the beef

While simmering, sauté onion, bell pepper, and jalapeno in olive oil until the vegetables caramelize

Strain any excess liquid

Return to the heat and add 1/4 cup of water, fajita seasoning mix and garlic

Stir and blend all seasonings and sautéed vegetables well with the beef; remove from heat

Lay out the flour tortillas and layer as follows (amount can be according to you preference):

Refried beans
Spanish rice
Beef mixture

Roll the tortilla to form your burrito

Lay the rolled burritos on a cookie sheet, seam side down
Garnish with grated Colby Jack Cheese

Put dish in oven until cheese is melted

Garnish with Salsa
