Directions:
Mix the sugar and the cinnamon in a bowl. After the apples are peeled, cored and cut, sprinkle the sugar mixture over the apples. Fill the pie crust, mounding the apple. slice the butter and put onto the apples. Cover with a crust.

Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together. Wrap in plastic wrap, and chill for at least 30 minutes before rolling. Bake the bottom crust until it is slightly brown. The dough is enough for a top and bottom crust.

Use a 9 inch, deep pie plate.

Bake the pie at 325 degrees for 1 hour. If the top is getting too brown cover with foil. Bake on a cookie sheet just in case it spills over.
