1 lb. sausages
pan cake batter mix
Directions:
Directions:

Bake sausages in a metal pan in a hot oven (400+) till lightly done

Remove from pan, add lard (manteca) so that the whole bottom is coated

put back into oven for about 2/3 min. till smokey hot


Pour in the batter and place sausages in the batter.


Bake until the batter is cooked through. It will rise and almost cover the sausages.

Serve with salsa (for a Mexican feel) or with Mango Chutney (for an Indian feel)

or with Branston pickle (for a Brit feel) , or just good thick brown gravy!
