1/2 cup butter
1 cup boiling water
1 cup flour
1/4 teaspoon salt
4 eggs

Vanilla or Chocolate Pudding for filling

Directions:
Directions:
1. Melt butter in water.
2. Add flour and salt all at once and stir vigorously, until mixture forms ball that doesn't separate. Remove from heat and cool slightly.
3. Add eggs, 1 at a time, beating vigorously after each addition until smooth.
4. Drop from spoon 2 inches apart on greased or silpat lined baking sheet.
5. Bake in preheated oven at 450 for 15 minutes, then decrease to 325 for 25 minutes.
6. Remove and cool on rack.
7. Make a pudding to fill - vanilla or chocolate. Split cream puffs and fill with pudding.

Growing up, this was one of my favorite desserts that Gramma Becky would make. She used packaged Jello Pudding mixes, but you can get up the ante and make your own filling from scratch.
