1 lg. purple onion
1/2 Purple cabbage, chopped
2 purple sweet potatoes, cubed
3 qt. water
6 garlic cloves
2 inches fresh ginger
1 tsp. ground bay leaf
1 tsp. marjoram
1 tsp. tarragon
2 tsp. salt
1 Tbsp. maple syrup
2 Tbsp. Bragg liquid aminos
2 Tbsp. coconut oil

Blend ginger and garlic in the blender with a little water. Combine all ingredients in a large pot. Simmer for about twenty minutes. Remove 3-4 cups of soup. Blend in the blender, and add it back to the soup.

I just had to create this, because purple is my favorite color. It's fun to put it on the menu as Cabbage Sweet Potato Soup. Then there is a look of surprise when the dish is served. People are generally delighted by the color and then the taste.
