3 pounds boiling potatoes sliced
3 Tablespoons apple cider vinegar
2/3 cup potato water
1 cup finely diced yellow onion
2/3 cup finely diced celery
1/4 cup diced dill pickle
Salt and pepper
3-4 strips crisply cooked bacon, crumbled
3 hard boiled eggs, diced
1/2 cup canned red pimento, diced
2-3 Tablespoons minced fresh parsley, basil
3/4 - 1 cup homemade mayonnaise (1/2 cup to be folded into salad with rest reserved for decorating

Directions:
Directions:
Boil the potatoes and save the juice. Drain. Let set covered for 5 minutes, then fold in veggies which are chopped before cooking potatoes.
