( 1) 10 oz. pkg. frozen chopped broccoli cooked as directed & drained.
6 eggs, beaten with salt & pepper to taste
3 T. butter
4 oz. fresh mushrooms sliced (canned - use 1 can drained)
1 med. onion chopped

1/3 C. grated Parmesan cheese

Directions:
Directions:
Saute butter, mushrooms, and onion for 5 min. until tender but not brown. Stir broccoli into eggs and pour over mushroom mixture. Cook over medium heat till eggs are set (about 7 min.)

Sprinkle cheese over top. Broil about 6" from heat for 2-3 min. until nicely browned.
