Cathy's Vegetable Quiche Recipe

1 C. flour
1/3 C. butter
1/4 t. salt
cold water

1/2 C. finely sliced mushrooms
1/2 C. chopped broccoli
1 3/4 c. milk
4 eggs beaten
2 T. flour
sprinkle of nutmeg
3 green onions sliced (yellow O.K.)
1 C. cubed cheese (I use cheddar, but you can use muenster, monterey jack, mozzarella)
1/2 t. salt
sprinkle of black pepper

Crust: Mix all but water together till crumbly. Add cold water a little at a time until dough
barely sticks together. Form into a ball and roll out on a floured board. Roll from
center toward outer edges. Put into an oiled pie pan.

Quiche: After the pie crust is made and the vegetables are cleaned and chopped, preheat oven
to 350 degrees. Mix dry ingredients with a little of the milk until smooth. Gradually add
the rest of the milk and the eggs. Put vegetables and cheese into pie pan and pour
quiche mixture over them to cover. Bake 45 minutes (or longer, possibly. It's done
when a knife stuck into the middle comes out clean.)
