8" pie shell
2 C. chopped fresh spinach, packed or ( 1) 10 oz. pkg. frozen spinach
1/2 t. nutmeg
3 eggs
1/2 c. cream or evaporated milk
5 T. butter
3/4 t. salt
1/4 t. pepper
2 T. green onions finely minced (can substitute yellow onions & it works)
1 1/2 C. grated Swiss cheese

Partially bake pie shell at 400 degrees until it starts to color & shrink from sides (about
10 min.) Melt 1 1/2 T. butter in skillet; stir in chopped spinach, 1/4 t. salt & pinches of
pepper & nutmeg. Cover & cook very slowly for 2 minutes till spinach has released its
juices. Uncover. Raise heat, stir for 2-3 minutes till all moisture has evaporated. Set
aside. Cook onions in 2 T. butter. Add spinach and stir over moderate heat for several
minutes. Remove from heat and stir in 1/2 t. salt, 1/8 t. pepper, and rest of nutmeg.
Beat eggs and cream with fork and add to spinach mixture. Pour into pie shell.
Sprinkle with cheese, dot with remaining butter and bake 25-30 minutes in a 375
degree oven. (Note: it always takes me longer for it to get done - plan on another 15-
30 minutes of baking being possible. It's done when a knife stuck into the middle
comes out clean.
