1 lb lump crab meat
2 Tbsp mayonnaise
1 Tbsp lemon juice and some zest
1-2 Tbsp crushed saltines
Salt and pepper and Old Bay Seasoning to taste
1-2 tsp mustard to taste

Directions:
Directions:
Mix up the mayonnaise, mustard and lemon juice and zest. Crush the saltines. In a medium bowl, put the lump crab in. Add the mayo mixture and saltines, be careful not to over mix so you have some crab still in lumps, add the spices, make into 4-6 patties. Bring oil in a skillet on medium to a shimmer. Place the crab cakes in and let cook without turning for 4-5 minutes, letting them get golden brown on the bottom, carefully turn and cook until bottoms are again golden brown. 4-5 minutes. Since there isn’t egg added if the crab cake is too loose, just add more cracker crumbs or mayo. Serve with lemon wedges and a fresh green salad.
