2 cups corn meal
1 cup brown rice flour
1/2 cup whole wheat flour
1 teaspoon sea salt
1 Tablespoon corn oil
2 - 2 1/2 cups hot water

Directions:
Directions:
Mix flours and salt in large mixing bowl. Add oil and mix, first with a spoon and then by rubbing mixture between hands until lumps are gone. Add hot water a little at a time and mix thoroughly. For a drier and more grainy-tasting bread use about 2 cups water, to make a batter that is stiff but moist; for a moister and sweeter-tasting loaf use about 2 1/2 cups water to make a wetter batter. Place batter in an oiled 9 X 9 X 2 inch baking pan and bake at 375º for 50-60 minutes. This will not be light and crumbly like other corn breads since no leavening is used; it is a quick and easy recipe, however, which highlights the grains' natural sweetness.
