1/4 cup butter
1/4 cup chopped onion
1/4 cup flour
1-14 oz can chicken broth
1-12 oz can evaporated milk
2 lge or 3 medium baking potatoes

Directions:
Microwave potatoes
Melt butter in large pan over medium heat. Add onion. Cook 2-3 min. or until tender. Stir in flouw. Gradually add broth and milk. Scoop pulp from 1 potato, mash.(save skin) Add pulp to broth. Cook just until it boils. Dice remaining potatoes and skins. Add to soup and heat through.
