1 1/2 cups brown sugar
1/2 cup water
1/4 tsp cream of tartar
4 lg egg whites
1/2 tsp vanilla

Directions:
Directions:
Mix brown sugar, water and cream of tartar in heavy pot. Stir to blend. Attach candy thermometer Bring to a boil and boil till 242º.(thread stage) Meanwhile beat egg whites till stiff peaks form. Slowly pour hot syrup into egg whites while beating Beat in vanilla last. Makes quite a lot. Will do 3 layers of cake.
